Ants on a Log - Serves 4
What You'll Need
  • 4 stalks celery, cut lengthwise
  • 1/2 cup peanut butter or 1/2 cup low-fat cream cheese
  • 1/4 cup of your favorite "ants"(see"examples")

Cooking Steps
  1. Place 8 celery sticks on a plate.
  2. Spread peanut butter or cream cheese in the center of the celery.
  3. Place a line of "ants" down the center of the celery stick.

  8. sunflower seeds (without shell)
  9. low-fat granola

Primetime Pasta Shells - Serves 8
What You'll Need
  • Jumpo past shells
    (12 ounce box, cooked)
  • 1 pound boneless, skinless chicken breast, cooked and diced
  • 2 cups fat-free ricotta cheese
  • 2 ten-ounce packages frozen chopped spinach, thawed and drained
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 teaspoons dried basil
  • 3 cloves garlic, minced
Cooking Steps
  1. Prehead oven to 350 degrees.
  2. Mix chicken, drained spinach, ricotta cheese, Parmesan cheese, egg, basil and garlic together in a large mixing bowl. Season with salt and papper.
  3. Pour 1/2 cup of pasta sauce in a 9X13 baking dish.
  4. Fill each pasta shell with the spinach and chicken mixture. Place shells in baking dish.
  5. Pour remaining pasta sauce over the shells.
  6. Cover baking dish with aluminum foil and bake 30 minutes.

Just a little Sloppy
- Serves 6
What You'll Need
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 pound lean ground turkey
  • 1 6-ounce can tomato paste
  • 1/2 cup water
  • 1/2 cup unsweetened pineapple juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • Cooking spray
  • Whole wheat rolls
Cooking Steps
  1. Spray a medium pan with cooking spray. cook ground turkey, onion and green pepper until the temperature of the turkey mixture reaches 165 degrees on a meat thermometer and peppers and onions are soft.
  2. Drain liquid and fat from meat mixture.
  3. Add tomato paste, water, Worcestershire sauce, minced garlic, oregano, basil and pineapple juice, and cook on medium heat for about 15-20 minutes.
  4. Serve on while wheat rolls.

Silly Quesadilly
- Serves 6
What You'll Need
  • 1 teaspoon olive oil
  • 1/2 cup green pepper, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup zucchini, diced
  • 1/2 cup black beans, drained
  • 1/2 cup canned corn, drained
  • 1 cup low fat cheddar cheese, shredded
  • 6 six-inch whole wheat tortillas
  • 1cup salsa
  • Cooking spray
Cooking Steps
  1. Preheat oven to 400 degrees
  2. Spray a medium pan with cooking spray.
    Add oliveoil to pan and cook the peppers, onions and zucchini on medium heat until soft (about 5 minutes).
  3. Add beans, corn and 1/4 cup of salsa and cook for 3 minutes.
  4. Spray a baking sheet with cooking spray and place 3 tortillas on sheet. Spoon vegetable mixture on tortillas and spread close to edges.
  5. Sprinkle 1/3 cup of cheese on each tortilla and place another tortilla on top of each.
  6. Bake in the oven for 5-7 minutes until cheese is melted and tortillas are crispy.
  7. Cut quesadillas in quarters and serve with remaining salsa.

Tip of the Day 4

For a healthy snack, add low-fat cheese to whole-grain crackers. A serving of cheese is 1 ounce: about the size of two dominos. Six medium-size crackers are one serving.
