Baked Fish and Vegetables


4 catfish fillets
1 sweet potato
1 lg. onion
2 to 3 carrots
1 summer squash
1 to 2 tbsp. lemon juice
Fresh basil
Fresh parsley
Salt and pepper



This is a fat free meal.

Spray glass baking pan with cooking spray. Put fillets in pan and sprinkle with lemon juice. Top with carrot sticks, sliced onion, sliced sweet potato, and sliced squash. Sprinkle with salt and pepper, then lemon juice. Cover with foil and bake until sweet potatoes are done, about 45 minutes. Goes well with couscous.
